Shrimp Salsa

Ingredients

  • 1 large red pepper
  • 1 large yellow pepper
  • ½ bunch of celery
  • 1 medium or ½ large white onion
  • 1 cup of chopped grape tomatoes
  • 2 lbs of shrimp
  • ½ cup of fresh cilantro
  • 1 cup of lime juice
  • 1 bottle of Ken’s Italian dressing

Method

  1. Chop all the ingredients except shrimp
  2. Cut shrimp into bite sized pieces
  3. Mix dressing and lime juice together and pour over mixture of tomatoes, celery, peppers, onions, and shrimp.
  4. Refrigerate overnight
  5. Before serving drain off dressing, add chopped cilantro and serve with Scoops
